Hummus is the quietest thing we make and one of the things we're strictest about. Whipped fresh every morning, smooth all the way down, sharp with lemon and tahini, finished with good olive oil. It looks simple because we did the work already.

Morning batch, no shortcuts

The chickpeas cook low and slow until they give up completely, because hummus is only as smooth as the chickpea is soft. Then they get whipped with tahini, fresh lemon, garlic, and a little of the cooking liquid until the texture goes from paste to cloud. The balance is the family's call and it leans bright: enough lemon to wake the tahini up, enough garlic to remind you where you are. A pool of olive oil on top, and it goes out.

We make it in the morning and we make it again if we run through it, which on weekends we usually do. Hummus from a tub tastes like the tub. Ours tastes like Tuesday morning's batch, because it is.

Temperature matters too, and it's the detail most places miss. Hummus straight out of a cold walk-in tastes muted. Ours gets a few minutes to wake up before it leaves the counter, so the lemon and garlic actually show up to work. Small thing. This dish is mostly small things, stacked carefully.

The opener that runs the table

Hummus at Patar plays two positions. As a starter with warm pita, it buys the table five quiet, happy minutes while the spits do their work. As a side, it becomes infrastructure: a swipe under your falafel, a landing pad for carved beef, the thing you drag a french fry through when nobody's watching. There's no wrong technique, but there is a best one, and it involves tearing the pita instead of cutting it. Warm bread, torn by hand, through cold smooth hummus. That's the bite.

Add it to any plate and the whole order levels up. The chicken especially likes having it around, the lemon in both shaking hands across the plate. If there are kids at the table, watch how fast this bowl goes first.

Small dish, long history

Every family along the eastern Mediterranean has a hummus opinion, and Glendale might have more of those opinions per square mile than anywhere in America. We serve ours into that conversation with respect and a steady hand. No toppings circus, no deconstructions. Chickpeas, tahini, lemon, garlic, oil. The hummus itself is both vegan and gluten-free. It's served with pita, so ask us to hold the bread or pair it with veggies if gluten is a concern.

How long does it keep at home?+

Covered in the fridge, two to three days easily. Let it sit out a few minutes before eating and hit it with a little olive oil to bring it back.

Does it come with pita?+

Yes, warm pita comes alongside. You can add extra bread to the order if your table has strong dippers.
